Biography
Eleanor is the Head of the Department of Land Sciences which includes programmes in Agricultural Science, Agriculture, Food Science, Forestry, Horticulture and Land Management. Her role includes the management and further development of the existing educational programmes plus the creation of appropriate new programmes, courses and modules to meet the current and future demands and challenges faced by the Land Sciences sector. She promotes research and innovation, collaboration with industry and facilitates and enables staff in the Department to continue their research activities.
She has over 20 years experience in lecturing, course development, course co-ordination and overseeing the progression, placement and welfare of students. She has a vast range of experience and knowledge in the areas of Food Safety and Quality Management having worked for over 10 years as a Technical Manager in the food processing sector.
BSc. (Hons) in Food Chemistry and Nutrition, University College Cork.
MSc.in European Food Regulatory Affairs, University College Dublin/University of Ulster.
Higher Diploma in Business Management, Waterford Institute of Technology
Eleanor has over 20 years experience in lecturing, course development, course co-ordination and overseeing the progression, placement and welfare of students. She was Programme Leader for the BSc. in Food Science with Business and the BSc. (Hons.) Food Science and Innovation from 2008 to 2017. She has taught modules in Nutrition, Food Regulation, Food Safety and HACCP. She has supervised final year projects for students studying Agricultural Science and Food Science.
Eleanor has promoted and engaged with Erasmus + and International actvitives within the University
