Final-year students on the BA (Hons) in Culinary Arts programme at South East Technological University (SETU) have released a digital cookbook packed with delicious recipes.

This book is available for free download and features a variety of recipes including pasta arrabbiata, Guinness and treacle brown bread, baked Alaska, and mojito tart.

Masterclass experience

Over their last semester at SETU, BA (Hons) Culinary Arts final year students took part in the media and visual art - food imagery, promotion and design module. Thanks to funding from SATLE, the class participated in a professional food styling and photography masterclass in Dublin.

During this experience, students developed, styled, and photographed their own recipes, work which has now been compiled together to publish a cookbook.

Dedication

SETU lecturer and chef Edward Hayden praised the students for their creativity and talent showcased in this cookbook. “I am delighted to share the resulting e-book with you, showcasing both the creativity and dedication of the students. I hope you enjoy browsing through it, and perhaps even try out some of the recipes,” he said.

SATLE funding

Edward thanked SATLE for funding this experience for SETU’s final year Culinary Arts students: “I would also like to sincerely acknowledge the assiduous efforts of our students, as well as extend my thanks to our colleague Fiona O’Connor, SATLE Coordinator, for her continued support throughout the project."

Proud

The book includes a foreword written by SETU President, Professor Veronica Campbell, who commented: “The talent, creativity and expertise on display (in this e-book) is of the highest standard and we are proud of what are students have achieved.”

“Culinary Arts is a practical and multi-dimensional subject with students required to hone a range of skills, including how they display, market and communicate their culinary ideas and proficiency. This has culminated in this impressive e-cookery book.” Prof. Campbell continued.
